If you are looking for authentic southwest cooking recipes that are healthy and nutritious, no need to search anymore. Southwest culinary expert, Kelley Coffeen, Ph.D. takes you on a tour of the southwest region with more than 140 recipes that stimulate the pallet, while focusing on weight loss, managing diabetes, and overall healthy eating.
Dr. Coffeen’s book, Tex-Mex Diabetes Cookbook, shares a variety of recipes that include healthy ingredients without losing the authenticity and flavor of the southwest border region. The book shares recipes such as Smoked Cheddar Cheese and Green Chile Tamales, Pork and Pepper Burritos, Roasted Pineapple salsa and more.
“This is not a diet book but a classic collection of beloved southwest and Mexican recipes that are easy-to-make, delicious, and healthful. Think low-carb, low fat, sugar-conscious favorites made consciously so that everyone can enjoy,” said Dr. Coffee. “The book offers easy, healthy, and family-friendly dishes to feed the whole family.”
Dr. Coffeen is a food consultant, blogger, and cookbook author. Growing up in the southwest region of the United States, she developed a love for Tex-Mex, and Mexican food and culture. She hosted a weekly cooking show out of El Paso called Kelley’s Kitchen.
