Authentic Southwest Tex-Mex Diabetes Cookbook

Southwest culinary expert, Kelley Coffeen, Ph.D. takes you on a tour of the southwest region with more than 140 recipes that stimulate the pallet, while focusing on weight loss, managing diabetes, and overall healthy eating.
Dr. Coffeen’s book, Tex-Mex Diabetes Cookbook, shares a variety of recipes that include healthy ingredients without losing the authenticity and flavor of the southwest border region. Dr. Coffeen is a food consultant, blogger, and cookbook author. Growing up in the southwest region of the United States, she developed a love for Tex-Mex, and Mexican food and culture. She hosted a weekly cooking show out of El Paso called Kelley’s Kitchen. Today, she lives in Las Cruces, New Mexico with family and was named “A Women of Influence 2020” for the state of New Mexico by Albuquerque First Business Journal for her culinary work and support of the citizens of her state.
Dr. Coffeen recently generously donated 100 cookbooks to the Paso del Norte Health Foundation for distribution to diabetes education providers in the region.
