A Tasty Recipe from the Sabrosa Vida Cooking Program

This month’s Sabrosa Vida tasty recipe is Cilantro and Vegetables Rice.

Sabrosa Vida is a free chef-led cooking and nutritional educational program funded by the Health Foundation in partnership with the El Paso Diabetes Center of El Paso.

INGREDIENTS

½ bell pepper
1 carrot
½ onion (optional)
3 cloves garlic
2 cups water
1 cup brown rice or quinoa
Canola oil spray
½ bunch cilantro
Salt and pepper to taste

TO PREPARE

Gather all the ingredients together. Chop and dice vegetables.

  • Place water and rice in a pot. Bring water to a boil.
  • Reduce water to a simmer (bubbles under water) and cover with a lid or foil and cook for 15 minutes. After, let sit for 5 minutes.
  • In another pot, add a spray of canola oil and cook vegetables, onion, and garlic until tender/clear.
  • Fluff the rice with a fork. Add in tender vegetables and fresh cilantro and gently stir.
  • Serve on 1 cup on ¼ of a 9-inch plate.

Evidence associates healthy eating with better health outcomes; however, many people do not consume the daily recommended levels of nutritious foods, such as fruits and vegetables, that make up a healthy diet. The Health Foundation’s focus in the Healthy Eating initiative is educational programs, such as nutrition and cooking classes, that influence behavior in selecting, preparing, cooking, and eating healthy foods and policy and promotion activities that encourage healthy eating.
